Make This! – Decadent Raw Turtles

Decadent Raw Turtles

If you ever have a craving for a rich caramel chocolate treat ie. turtles, you must make these! These are perfect to enjoy right out of the freezer so be sure to make lots and store some for later (if you don’t eat them all before that!). You will be amazed at how the dates transform into a rich caramel. No added sweeteners or artificial anything in these!

 

You will need: Food Processor, wax or parchment paper, freezer container, spoon

Ingredients Makes 15 small turtles

Caramel filling

  • 7 medjool dates (pitted and soaked for about 15 minutes in water, then drain)
  • 2 tbsp coconut oil
  • ½ tsp vanilla powder or 1 tsp vanilla extract
  • pinch of himalayan salt

Chocolate coating

  • ¼ cup coconut oil, melted
  • 3 tbsp raw cacao powder
  • 3 tbsp maple syrup
  • pinch of himalayan salt
  • 30 Raw pecan halves, 2 for each turtle

Instructions

  1. Add all caramel filling ingredients to a food processor
  2. Process until well combined, scraping down the sides a few times until a consistency of a thick caramel
  3. Line a container suitable for freezing with wax paper and add rounded teaspoonful drops of the caramel mixture onto the paper.  You can flatten slightly with your fingers to desired shape
  4. Place 2 pecan halves side by side on each piece of caramel
  5. Place lid on container and freeze while you make the chocolate
  6. Melt the coconut oil in a saucepan and add to the food processor along with remaining chocolate ingredients
  7. Process the chocolate mixture until smooth
  8. Take caramels out of the freezer and spoon chocolate mixture onto each pecan/caramel until covered  (don’t worry if it spreads all over you can remove them from the waxed paper once set)
  9. Place in the freezer. You can serve once hardened in about 20 minutes by removing from wax paper, breaking away any extra chocolate that spread. Keep the remaining in the freezer for a treat anytime of the day! (These are perfect to eat right out of the freezer, if left at room temperature for too long they can soften or melt)
