Cranberry Coconut Flour Cookies

gluten free, dairy free, nut free

These cookies are made with coconut flour which makes them perfect for anyone avoiding gluten.  A healthy alternative to the sugar filled sweets you often find around the holidays and super quick to make. Enjoy these guilt free cookies and share with friends :)

Makes 12 cookies

 

⅓ cup coconut flour

¼ cup coconut oil, melted

¼ cup maple syrup

1 tsp vanilla extract

2 tsp ground flax seeds

¼ tsp himalayan salt

2 eggs

¼ cup dried cranberries

 

  • Preheat oven to 350 degrees
  • Add all ingredients except cranberries to a bowl and stir until well combined
  • Add in cranberries and stir
  • Place tablespoon sized cookies onto a cookie sheet and shape into formed cookies
  • Cook for 14 minutes and let cool before serving
