Coconut Vanilla Chia Pudding

gluten free, dairy free, (optional) nut free

Chia pudding is so easy to prepare and makes a delicious breakfast. Place ingredients in a jar at night and it turns into a healthy delicious pudding in the morning. customize with different spices and toppings!

Makes 4 servings

2 cups unsweetened almond milk (or milk of choice)

5 tbsp whole chia seeds

2 tbsp unsweetened shredded coconut

1 ½ tsp vanilla powder

1/2 tsp cinnamon

3 tbsp maple syrup

optional toppings- coconut flakes, pumpkin or sunflower seeds, dried or fresh berries.

  • Add ingredients to a large mason jar, tighten lid and shake to combine
  • Shake a few more times to combine and place in the fridge overnight
  • Shake again in the morning and enjoy as is or with added toppings of choice.
