Carrot Ginger Soup

This flavourful soup is great to enjoy during a cleanse or anytime. Ginger and carrots with a hint of coconut milk make this a satisfying homemade soup.


Makes about 5 servings



  • 1 tbsp coconut oil
  • 1 medium onion chopped
  • 2 inches of fresh ginger, minced
  • 2 garlic cloves, minced
  • 4 cups chopped carrots (approx. 8-9 large carrots)
  • 4 cups vegetable or chicken broth
  • ½ tsp natural sea salt
  • 1 cup coconut milk (canned)
  • shredded unsweetened coconut (garnish)



  1. Sauté chopped onion in coconut oil until translucent, about 3-5 minutes
  2. Add in minced garlic and ginger and cook for another 2 minutes
  3. Add in chopped carrots, stock and salt to taste
  4. Simmer on medium to low heat for about 30 minutes
  5. Puree in batches in a blender or food processor, making sure not to fill the container as hot liquid can spill out.   Puree in 2 – 3 batches or use an immersion blender in the pot
  6. Place pureed soup back into the pot and add the coconut milk
  7. Stir and serve, I add shredded unsweetened coconut as a garnish
  8. Enjoy a delicious bowl of clean homemade soup :)
