Banana Oatmeal Breakfast Bites

These breakfast bites are somewhere between a cookie, baked oatmeal and banana bread. Packed full of heart healthy oats and blood pressure lowering bananas you can’t go wrong with having these for a quick breakfast. No refined flour or sugar found in these bites.                                               

Makes about 20 bites

Ingredients

3 ripe bananas

⅓ cup sunbutter

¼ cup unsweetened applesauce

2-3 tbsp maple syrup (sweeten to liking)

1 tsp vanilla powder (or vanilla extract)

1 tsp cinnamon

½ tsp nutmeg

2 cups rolled oats (look for gluten free oats if sensitive to gluten)

¼ cup pumpkin or sunflower seeds

½ cup raw cacao nibs

Instructions

  • Preheat oven to 350 degrees
  • In a large bowl mash the banana with a fork until smooth
  • Add in the sunbutter, applesauce and maple syrup and mix together
  • Then add in vanilla powder, cinnamon and nutmeg to wet mixture and mix together
  • Add in oats, pumpkin or sunflower seeds and cacao nibs and mix well
  • Drop spoonfuls onto an ungreased baking sheet and bake for 12-15 minutes
  • Store in the fridge to have on hand for a great on the go breakfast
