Almond Butter Coconut Blondies

Gluten free, dairy free

These treats are made with no grains at all! Instead they contain protein rich eggs and almond butter but feel free to make these nut free with sunbutter. Just be sure to add a teaspoon of lemon juice as sunbutter can sometimes turn green in baking.  This happens due to a chemical reaction with the chlorogenic acid (chlorophyll) contained in sunflower seeds, a little acidity will prevents this from occurring.


You will need: Mixing bowl, big spoon, whisk, 8 x 8 square pan, parchment paper, spatula

Ingredients Makes 16 squares

  • 2 large free run eggs
  • ½ tsp vanilla powder or 1 tsp vanilla extract
  • 1 cup almond butter
  • ½ cup organic cane sugar
  • ½ cup shredded coconut + 1 tbsp to sprinkle on the top
  • 1 tsp baking soda
  • ½ tsp himalayan salt
  • 1 tbsp coconut


  1. Preheat oven to 325°
  2. In a mixing bowl add the eggs and vanilla then whisk until well combined
  3. Add mixture and all other ingredients and stir well with a big spoon.  The mixture will be quite thick
  4. Line a 8 x 8 square pan with parchment paper and spread in the mixture evenly, you will need to spread out the mixture with a spatula and press into all corners evenly
  5. Lightly sprinkle the top with a bit of the shredded coconut
  6. Bake in the preheated oven for 25 minutes
  7. Let cool and cut into squares, enjoy and share with friends :)
